Paleo / Keto Egg kothu parotta:
If I don’t miss any of my usual food in paleo/ Keto diet, why can’t I follow… don’t miss this recipe!!!
Egg kothu paratta is my favourite and I missed it until yesterday, now I am completely satisfied.
Ingredients:
1 Tbsp coconut oil 1 tsp fennel seed 1 onion chopped 1/2 tsp ginger garlic paste 1/2 tsp turmeric powder 1/2 tsp chilli powder 1/2 tsp garam masala Salt2 eggs 2 -3 Tbsp chopped coriander leaves 1/2 cup any paleo curry ( I added chicken gravy)
for making Paratta1 : 1/2 cup coconut flour 1 Tbsp psyllium husk 1/2 tsp baking powder Salt
For making paratta2: 1/2 cup coconut flour 1 Tbsp psyllium husk 1/2 tsp baking powder 30g cheddar cheese ( for another method paratta)
Direction:
Paratta1 : Combine all the ingredients in a bowl and add warm water mix to form a dough, keep closed for 5-10 mins.
Divide the dough into 4 equal portions, don’t knead much.
Place in between 2 butter papers and using a rolling pin and roll it to a flat round shaped.
Heat a pan and grease the pan slightly and place the paratta, cook both sides over low flame better.
Paratta2:
Same process to make as in paratta1. Then heat the cheese and mix it thoroughly with the dough. Follow the same as in paratta1.
Once cool down, roughly make parattas into small pieces and keep it aside.
Heat oil in a pan and add fennel seeds.
